Kale with Chorizo and Eggs

A perfect breakfast or brunch option.

Ingredients

Directions

  1. Heat the butter in a heavy-based pan.
  2. Chop the chorizo and slowly fry until golden.
  3. Remove from pan but retain melted butter and fat.
  4. Heat to max heat and add kale.
  5. Fry kale until wilted.
  6. Add water and rapidly boil until reduced.
  7. Form kale into a nest and crack eggs over the top.
  8. Cover and cook until eggs are opaque.
