A quick and easy crustless quiche.

Directions
- In a saucepan, fry mushrooms, peppers and spinach in coconut oil. Once cooked, take off the heat.
- In a separate bowl, mix together eggs and cheese.
- Add cooked vegetables to the egg and cheese mixture, then combine. Season with salt and pepper.
- Pour into a muffin tray.
- Put into the oven at 180 degrees Celsius for 20-30 minutes.
