- Preheat the oven to 180 °C.
- Line a cupcake tray by spreading a thin layer of butter in each mold.
- Slice onions and mushrooms, and lightly fry together with the olive oil in a pan until the onion is translucent and the mushrooms have released most of their water. Drain excess water. Season as you wish.
- Pour egg whites into the cupcake tray around half full.
- Add in mushrooms, onion, and chopped baby spinach. Top each with crumbled feta.
- Bake in the oven for 25 minutes.
