Directions
- Combine corn meal and milk, let stand for 10 minutes.
- In a large bowl, combine flour, sugar, baking powder and salt. Sift until blended.
- Add egg and oil to corn meal mixture, mix well.
- Add to dry ingredients. Stir just until combined.
- Fill greased muffin pans to 2/3 full. Bake at 400 degrees for 15 minutes.
