I made veggie "sushi" rolls today. Not my best effort aesthetically, because I didn't have have enough filling, but they were still pretty good. I'm enjoying coming up with plant based meals, it really forces you to get creative with ingredients and cooking methods.

I have planned a "refeed" day for this coming Saturday, a.k.a Bread day. The last one worked pretty well with boosting fat loss, hoping it will work again... also, I'm really looking forward to pigging out on some rye bread 😂. Just kidding. It's not really a cheat, more like a strategic move to help with weight loss. I have already carefully portioned out the amount of extra carbs I'll be taking in: mainly bread, and maybe some corn tortilla chips or popcorn. NO sugar though.

In other news, I did an upper body (arms, shoulders, chest and back) weight training, but not sure how effective it was; I didn't break much of a sweat. But my arms were shaking afterwards, so I think that's a good sign. Still trying to shake the fat around my lower body. It's such a mission, though 😭. But, I have to stay consistent. It has to come off eventually.

Soooo much food for today's meal, but I'm almost certain it doesn't exceed my daily calorie allowance, because it was just veg cooked in very little oil. Also, I ended up not eating the peanuts because they were raw (not roasted), and I'm not a fan of the taste of raw peanuts. So full right now, though.

I would've like to have warm porridge, but load shedding happened 😒. But it was still okay. Think I'm getting used to the texture of it. My favourite thing today was the chia seed "jam" 😍. So quick and simple to make but really tasty, and I still have most of jar left. No sugar or weird ingredients. I'll finish it during the week.

I did a check in weigh in on Friday and was happy to see that the extra carbs from legumes hasn't affected my weight. I've also noticed that I can workout longer and harder now that I'm taking in more carbs, which I'm really happy about. Still not eating bread, pasta or rice, though I bought some rice cakes today because I really wanted them. And sweet potatoes because they had the yellow ones which I love. Hopefully, I'm not pushing my luck 😅.

I'll weigh in again this Friday to check up, but since I know shark week is coming up, I'll try not to take reading to heart if it's not great.

So much kale for today's meal, but I was really craving it. Now I have enough for the next 3 days or so. There was nothing special for today's meal, but I tried to make it colourful. The highlight has to have been the mango coconut protein smoothie (more like a frappe); coconut-y with a sweet tang from mango. I'm experimenting with making my own coconut yoghurt, first batch came out so runny, but tastes like yoghurt. Will definitely keep at it.

I've also been eating loads of peanuts and raisins lately (more peanuts, than raisins though). I can't seem to get enough and I'm concerned that I may be overeating because of it 😔. I was planning to get back into tracking calories this month, at least for a short time, but I can't really muster the motivation. It's a bit of extra effort weighing everything and keep close tabs. I also tend to get a bit obsessive about it. And I like the way things have been lately, feels more natural. I'll decide after my check-in weigh-in this weekend.

Came off a night shift today and was really not up for working out. But I managed to force myself into doing 30 minutes of HIIT cardio. Glad I did it.

Today's meal was delicious 😋!! Middle-Eastern inspired chickpeas (spiced and fried), over a buckwheat and lentil stir-fry, lots of vegetables on the side, with chickpea flour flatbread served with tahini sauce. Protein pancakes drizzled with peanut butter for dessert. So good!! It was a lot of food, but surprisingly I don't feel overstuffed, just full.

Yes, I'm still nervous about all the extra carbs, but I'm hoping that if I stick to my regular workouts, I will be fine. *Fingers crossed* Planning on doing weekly weigh-ins this month, just to make sure that things are going in the right direction as I change from low carb to a more inclusive whole food diet.
