Supper today was egg fried cauli-rice with veg and beef sausage pieces, served with assorted veg/salad. Dessert was grapes and apple pieces dipped in choc macadamia nut butter. Definitely not keto/low carb, but I am adjusting.

As confident as I was (a few days ago) about increasing my carb intake, I am quite nervous about it now. My main concern is what if it backfires and I start gaining. I'm probably being paranoid because there are logical answers/solutions to all my concerns, but I'm jittery about it. 😅

Going to be weighing in on Thursday/Friday, and I'm really hoping for a loss, though I can't be sure. I feel like I've packed on some muscle, which is great because my body is firmer and more toned... But the scale, though😒. I keep telling myself that the number is irrelevant (and I really do believe it), but after years (decades!) of validating one's beauty/self through these numbers, it's hard to shake the mentality. How do you get past it, for good?

Anyway, here's hoping for good things in the week. Almost half way!!!

For supper today it was eggplant curry on zucchini noodles, rotisserie chicken with veggies, and banana-chia-protein pancakes served with chocolate macadamia nut butter. Chocolate on chocolate is always yum 😍.

Glad that I've been consistent with my workouts lately, but I think it's time to change up my workouts again to keep things interesting. The best thing about exercise is seeing how much stronger I'm getting because the exercises that I thought were impossible to do are now part of the routine. Still struggling with push ups though 😒.

I'm planning lunchbox meals for the next month for my family to try. Wish me luck! Hoping to show them the pros of eating more plant based foods. It's mainly to save money, but I've found personally that eating more plant based meals is better on my digestive system. Even when I eat a lot on my Meat-free days, I don't feel as heavy or uncomfortable as when I eat a lot of meat (red, poultry, etc). Plus more veggies can't be a bad thing 😉.

I'm feeling a bit bloated/swollen these days. Shark week has come and gone, but I still feel bigger. I hope I haven't put on fat. I have been eating right, but maybe a bit too much. We'll see at the weigh in next week.

I'm planning to start tracking again mainly because I want to up my carbs to a more moderate intake. Still not going to be indulging in pasta, rice, bread, etc (I don't even really crave these things, except bread 😅). But I want to create more carb room for beans, legumes, more starchy veg (sweet potato, carrots, beetroot), and fruits. I'm aiming towards a flexitarian/pescatarian diet (mostly plant based with lean meats or fish a few days a week), and for that I'll need to consume foods higher in carbs for protein sources.

Reintroducing carbs is going to have to be done carefully to avoid fat gain. I know I will pick up weight, because carbs increase water weight, but as long as it's not fat, I don't think I'll mind. I'll still be eating whole, real foods, though. There's no going back to my old ways after all the progress I've made over the last 1 and a half years!

Anyway, supper was a "zoodle" bowl with mince and stir fried eggplant, a side plate of vegetables & salad, and a bowl of porridge. I've been experimenting with coconut flour and flax meal to make a low carb version of maize porridge (slap pap, I think it's called), because I've been craving the comfort. This was my best bowl so far, but the texture is still off, so I'll keep working on it.
