Healthy and easy to make side dish stir fry vegetables.

Directions

  1. Chop all the vegetables finely.
  2. Heat olive oil in a cast-iron skillet or a pot.
  3. Add all the ingredients and stir fry over high to medium heat, until vegetables are cooked through and tender.
  4. Serve as a side dish or mix with salmon or chicken to make a lovely colourful lunch or dinner.
