Cauliflower Fried Rice
Grated cauliflower instead of rice is both delicious and low carb.
Ingredients
Directions
- Grate the cauliflower using either the largest holes on a hand grater or with the grating blade in food processor. The results should almost resemble the size of cooked white rice.
- Heat oil to cover the bottom of a small skillet on medium-high.
- Quickly stir-fry the white of the onions and the garlic. Watch closely so as not to burn.
- Add the cauliflower; fry about 4-5 minutes, stirring constantly until it begins to color a bit. Don't overcook or it might get mushy.
- Stir in the soy sauce. Push the cauliflower to one side of the pan; pour in the beaten egg.
- Lightly scramble the egg briefly then mix into the cauliflower.
- Add the green onion tops and toss.
- Note: add some chicken and make it a meal!

Mixed with boned leftover chicken wings from the night before, and it was a beautiful thing, and made my wife's bad day at work into a wonderful "Chinese" lunch, after she had been wanting fried rice. Many Thanks for this!

This was great! I used canola oil instead of olive oil so I could add a few drops of sesame oil after cooking without the flavor of olive oil clashing with it. I also cooked a bit of small, raw shrimp with the cauliflower to make it shrimp fried rice!

I was surprised by how closely this resembles rice; very tasty. I mixed in shrimp to make it a meal instead of a side dish and added more scallions, because I like them. :)

Delish!!! A little salty with using Braggs Amino Acid so next time I'll use low sodium soy sauce instead or double to cauliflower to 2 cups. I also added a half tsp of toasted sesame oil and omitted the egg. Did not have scallions so I used a bit of regular onion instead.

I made this recipe for dinner tonight with some chicken breast. I added Sriracha for some kick and oh my goodness it was delicious! I literally licked the bowl :)
