Egg Crepes

Easy to make crepes that are lovely for breakfast with your favorite fillings.

Ingredients

Directions

  1. Blend all ingredients together with a blender.
  2. Heat a pan with a small amount of oil.
  3. Pour the mixture in the pan. When it starts to come away from the edges, carefully turn over with a spatula.
  4. Slide the finished crepe onto a plate and repeat until your mixture is finished.
  5. Season with artificial sweetner and ground cinnamon.

I've been wondering if I can make my crepes w/o the cream cheese to save on carbs... glad someone else tried it first! Thanks :) Gotta love those people who say things like "doesn't taste like..." or "tastes like eggs"! Read the title... EGG crepes! This is a wonderful "low carb" version... sometimes doesn't taste "exactly" like the "original" but sure does make an awesome substitute when you can't have the original!!!! Get real people!!!!!! Again, THANK YOU SOOO MUCH! :)

I used a hand blender, pulsing the eggs & heavy cream 1st, then streaming in melted virgin coconut oil. Also added a few drops of stevia and fresh ground nutmeg. This recipe makes 4 - 5 to 6" crepes. After each one was cooked over med/low heat (flipping once), flipped onto a plate, topped with a heaping TBSP of whole milk plain yogurt, thinly sliced nectarines and a few blueberries. The combinations are endless... yogurt, ricotta & fruit for breakfast or brunch. Savory for dinner adding sautéed veggies and thinly sliced meat or seafood with a variety of complimentary spices. Maybe add some curry to yogurt and top with thinly sliced lamb and sautéed sweet onion?

Yum, I made a cream cheese, little splenda, cinnamon mixture to stuff with. Turned out great. Reminded me of those stuffed pancakes with cream cheese filling at Bob Evens. Lol

Sounds yummy wonderful! I wonder if you can fill them with cream cheese... like cheese blitz. Plan on trying it tomorrow.

I added strawberries, curd cheese and honey and it tasted good, despite the crepes tasting rather omelett-y.
