Crustless Quiche Muffins

Made with sliced ham or turkey as the crust. Meat and veggies can be exchanged as desired and Tabasco can be hotter or not.

Directions

  1. Preheat oven to 350 °F (175 °C). Spray and line the muffin cups with the sliced meat.
  2. Mix together the remaining ingredients in a medium bowl.
  3. Slowly pour/scoop the mixture into each lined muffin cup (kinda tricky so spraying the cups keeps the spilled egg from sticking).
  4. Bake for 12-15 minutes or until egg mixture doesn't move when shaken. Pop out and enjoy with extra Tabasco on the side.
