Truly delicious spinach, onion and feta stuffed chicken breasts.
Ingredients
Directions
- In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
- Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
- Divide spinach mixture between chicken breast cutlets.
- Roll up and secure with toothpicks.
- In same skillet, heat remaining oil over medium-high heat.
- Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
- Remove toothpicks.

I made this for my husband and I. He doesn't like Feta cheese but he really liked this chicken. I will make this over and over again. So YUMMY.....

Love the recipe but it tasted a little salty so I wont add as much next time. Very good!

Tried it, loved it! Left out the lemon juice. Pounded the chicken thin which made rolling up a breeze. Will add even more diced onions next time. They really made it taste great!
