Today's supper: Stir fried napa cabbage & spinach topped with mince and stuffed chicken schnitzel, curried cauliflower & green beans, roast butternut and tomatoes. Dessert was a homemade paleo/vegan choc-banana "brownie" served with apple & raspberry compote and plain yoghurt (so good)! I was feeling fancy today, but time ran ahead of me, because I ended up eating late. Oh well...

Surprisingly, I didn't mess up over this weekend, mainly because we don't really have any traditions for Easter. And I was working. So there were no temptations. Except for the hot cross buns 😭😭, which always smell like heaven. But I didn't have any this weekend, as I'll save that for this upcoming weekend. Just a few, hopefully.

Need to stay on top of my workouts this week, because I'm planning a refeed day/meal for Saturday. I'd like to do a weigh in before then and monitor what the refeed does to my weight over a few days. I've never really bothered to do that, but I feel like it'll help me make a decision on my carb intake 😔.

Today's meal: Stir fried veggies in a tahini-peanut sauce served with black bean/lentil curry, and quinoa beetroot salad on the side. Really good and filling. I also had some fruit, peanuts, and a cup of Ruby Orange tea afterwards, but forgot to take a picture.

For today's meal, I had savoury chickpea pancakes topped with green curry black beans, stir fried veggies in a homemade peanut sauce, and salads. Meatless and almost completely plant-based (except for the mayo). Carby? Yes, definitely. But also packed with protein and fiber. So filling, but in a way that doesn't make me feel uncomfortable or "ugh". I'll admit, I was wary when I started doing these meat-free days, because of all the extra carbs. But I haven't experienced any negative effects in terms of weight loss/maintenance. Guess it works for my current lifestyle. Already planning to add a third meatless day to my weekly eating plan.

Workouts have gone well this week; I've been consistent. Not pushing myself as hard as usual, but I've also been tweaking my carb intake the last few days (as an experiment of sorts), so it's to be expected I guess.

Meat free Thursday today. I've "officially" add a second meat-free day to my eating plan... I'm working my way up to about 4 days a week without meat of any kind. My first attempt at making Burmese/Shan (chickpea flour) tofu today, and it was a decent attempt. It came out softer than I'd like, but was pretty tasty and filling. I've always wanted to try tofu, but I'm not keen on soya, just because of the grey area regarding how it affects hormones and what not. Once I get the texture right, I'll be using it in everything.

Gave in to the temptation of potato salad today, but I split the serving in half (for today and tomorrow). I'm still a bit wary of carbs, because they have never been my friend, but when I do eat them, I try to make sure it's the day of or the day before a hard workout or difficult physical activity, so I can burn them off without much damage. Maybe I'm being paranoid, but it's worked so far.

Got my workout in, even though my schedule is a bit of a mess this week. It was a good one, working the legs. I noticed my gym tights are loose now, which made so happy, even though buying a new pair is not so great for my budget. I feel like I'm getting stronger and leaner, even though I'm clearly eating more.
