Hake medallions oven baked in lemon butter. Roast Peppers & onion, roasted Parmesan baby potatoes, baba ganoush & Smooth cottage cheese to dip my potatoes in.

Salad - leftover roast chicken & veg from last night. Added crispy lettuce, sugar snap peas, 1/2 disk of feta, spring onion, 3Tbs Grated Parmesan, 1Tbs Baba ghanoush for extra flavour (Smokey eggplant dip) & home made salad dressing 💚
