A delicious lemony marinade delivers a healthy chicken meal with a kick.
Ingredients
Directions
- Split chicken breasts into 6 halves.
- Combine all other ingredients in a blender and blend well to make the marinade.
- Place chicken in a shallow dish and cover with marinade, reserving 1/4 cup for later.
- Cover and refrigerate about 2 hours, turning chicken occasionally.
- Remove chicken from marinade and broil in the oven or on a grill, 11-12 minutes on each side, basting frequently with reserved marinade.

Used ziplock to marinade, subbed 1/4 c coconut oil for 1/2 c canola, used boneless thighs instead of breast (on low-carb diet). Added nice flavor to chicken. Will add garlic next time. non-dieting hubby loved it.

I added a clove of garlic to the marinade and my wife and I loved it.

I forgot to put in 1/2 cup lemon juice as one of the ingredients. I couldn't see any way to edit it, so added it here!
