Nikina70's Journal, 18 Jun 21

Just been walking every day this week and calorie tracking (even without a kitchen scale) is going ok. Currently hovering around 1800 average daily calories so I'll try to reduce that to 1700 if I can in the next couple of weeks. As we're still staying with family I'm not restricting so much with food although thankfully we're not snacking much at all, but once we're on our own again it should be easier too.

And it's been really fun trying all sorts of vegan food - the variety and choice is just amazing here. And finding curly fries in the frozen section at Aldi on Wednesday - oh my - how could I say no? They were delicious and I'll definitely buy them again along with the Plant Menu No Beef Burgers.

Hubby and I got our first Covid vaccines on Sunday. We are so grateful! Also bought our first run-around car on Saturday - the first one we went to look at - it's a cute little red hatch-back so easy to park. Seemed to be well looked after, but only time will tell. So far so good with getting ourselves set up in the UK.

On Sunday, after the jabs, we went canoeing on a local river - such fun! I'd never done it before so really enjoyed it, but next time I'll hopefully get a chance to try stand up paddling as well - wasn't feeling like getting soaked in my clothes. So at least there was some activity this week and spent some time in the sunshine on the beach as well.

I also got some new walking sandals after my last ones broke. Will still try to glue those sometime.

It's our niece's 12th birthday on Sunday so I probably won't track as there will be cake and many treats I'm sure. Hope you all have a wonderful weekend!

Thanks LC! It's been lots of fun with a few stressful times in-between, but all good.

Aah, thanks for your lovely message melissatwa! It does feel a bit strange to be back after 16 years, and it's bringing back so many old memories too. Yes, I hope we will be alot more settled by the end of next month and can relax and get back to a routine too. It's so great to see you getting back to your old self again - inspiring others and myself included. Wonderful to have you back! Hope you have a lovely week! 🌻💕

Thanks Bootylicious1! ❤️ I will definitely have a look at those websites. We've already made a yummy vegan cottage pie since we've been here and I know it will be easy to veganise some of our other regular meals too - with all the great vegan cheeses, meat alternatives and plant milks available. We love plain and simple lentils, beans and rice too. I can't wait to get a good blender or a nutribullet too so I can make my own humus and pesto again - all in good time though.

A NutriBullet was one of the best investments I made last year, seriously! I'm saving for a decent air fryer now 😂 And yep, I stopped eating meat at New Year and have been surprised how easy it has been to swap a few ingredients to make vegan dishes, baking without eggs was a bit trickier, trial and error, but apart from that you should have no trouble ❤️
