Today was enchilada sauce making day. Since my cast iron pans live in the oven they have to sit up top when the oven is in use. I would give a lot for a big VIKING stove. Three batches today to be distributed amongst the gang. It doesn’t take long— it’s just messy and a Lot of measuring. No tomato sauce in this, just spices.

My oldest pan in that bunch is also the biggest—- right at about 100 years. It belonged to my grandmother. Then got my mom’ when she died and I just have picked up odds and ends of pieces when I find them.

I have many dutch oven pans as well. I use them at home and when we travel.💜💜

Nice! I switched to cast iron a few years ago after yet another non-stick pan became very sticky. Though I use enameled cast for sauces, curries, etc.
