Cheesy corn fritters
3 cups corn (fresh frozen or canned)
1 cup flour
1 tsp baking powder
1/4 t paprika
Salt and pepper
1/3 cup cilantro or parsley
2 eggs
1/3 cup milk
1 cup cheese, grated
Oil
Mix the milk and egg together with the herb and cheese
Sift all the other ingredients and add wt to it.
Stir and fry scoops in a little oil. 1/3 cup to keep them all the same size

Topped with and egg and some bacon would make a great breakfast. Gonna try it with zucchini next instead of corn
