Filling meal today. I'm always super stuffed after a meat-free meal, even though I'm pretty sure I'm not overeating. It's all the vegetables, I think. Fibre is really filling. I made lentil and eggplant "meatballs" which turned out pretty bomb (sprinkled generously with nutritional yeast). Will try making it again, but maybe as a burger, or make the balls smaller to put in a (no-)meatball sub 😋 for my indulgence days.
Still going strong with the eating plan. I'm now doing 4 days of whole food plant-based meals per week, and I will add another one next month. Still struggling with my refeed days, in that I tend to overeat, but I've found that planning ahead lessens the chances of going overboard. It's a work in progress. Workouts are also still happening, even though the weather continues to try to trip me up 🙄. Going to keep going strong as long as I'm well and and able.
I haven't weighed myself lately, been putting it off for no particular reason, though I can see a physical change in my body. But I think I'll be okay with whatever the scale says, because my body is slowly (so slowly 😭) taking on the shape I'm looking to end up with.
