Epic! I broke the plateau!
Increased protein and calories slightly, still focusing on fibre and protein, which helped when my weight hardly changed.
I struggled with fatigue and low blood pressure this weekend, likely because I ran out of my multivitamin. I’ll restock and carry on.

More health results: my body fat % (not the same as BMI) is down 5% in 8 weeks. I still have some way to go, but this is amazing progress. Dietician’s advice is to up my protein intake take. Because I’m eating whole food, plant based, this is going to require a bit more planning! (I’m averaging about 60g per/day atm)

Health news: since 18 December, my LDL has come down by 2 points - from 5.8 to 3.8, total Cholesterol dropped from 7.3 to 5.7
Still high but very good improvement, especially in this short time!
Also blood sugar HbA1c dropped from 7.6 to 6.4.. good results all around from my mainly plant-based way of eating.

Roast veg and Hubbard squash soup with tofu. I added some sage that I’d fried, and some small capers for flavour bursts. Topped with croutons made in the air fryer with a brush of olive oil and salt.
