Another hazy gray day here on the river. Not grumpy though.

It's interesting how since starting this little adventure, I've become way more creative with food. Tried three new things yesterday. Added mango to my protein smoothie (meh kiwi is better), Didn't have my usual turkey bites, veggies and tzatiki for lunch (kind of missed lunch as I was outside transplanting/mulching) and lost track of time.

Was raveous, and wanted something different....so I sliced up an apple, and had them with hazelnut butter as a dip. OMG was it ever good - cool, juicy, yummy and surprisingly filling. Then for dinner normally I nuke my cauliflower in the microwave and add fresh ground pepper when cooked. In looking at what was left in the fridge I saw an opened jar of Tostitos salsa con queso. Read the label, relatively low in calories. So I nuked my cauliflower for 2.5 minutes, then added 2 tbsp of the salsa con queso and nuked it for another minute. Took it out, gave it a stir and gosh, it was good. Certainly not quite like a cheese sauce covered cauliflower, a more watery version, yet it had the cheesey tase, was spicy and took that cauliflower to a whole new level.

They're calling for rain today/tomorrow which is a good thing - all the plants are getting quite sad and they sure need it. If the rain isn't torrential I'll be out there too as it is getting really hard to get a shovel in the ground (the joys of clay soil)

I like playing around with salsas on different things. I like “penny’s pico de gallo” as my “go-to”. Try a pineapple-mango salsa if you haven’t yet, and like those flavours. They are quite versatile as well 😉 I’m planning on making my own once the garden starts producing, and putting all the veggies into my smoker for a bit to give it a little extra flavour. Never tried it before, so we’ll see if it’s good or terrible 😜
