Nice article. I love to roast beets, plan to get some tomorrow. When we were young, my mom used to made a salad with beets and boiled eggs. We loved it because the beets would turn the eggs pink.

Shirfleur 1—same here, beets and eggs. We all liked it. I now make a simple sliced pickled beet and sliced orange salad. I have no idea where the idea came from, I have been eating it forever. A couple of weeks ago I added the remainder of some pickled beet juice to my jar of eggs that I was pickling. That turned out good too.. I don’t can beets or anything like that. I buy a commercial brand that I have only found at Big Lots and just once at Old World Market. I also get my saurkraut from Big lLots. A German friend of mine told me they were the most authentic she had eaten since she left Germany.. and I love them roasted. Beets are truly a powerhouse food that many don’t take advantage of.

I never thought I would like beets until my nutritionist suggested I try them. I love them now. I forget to buy them so thanks for reminding me to get some next time I shop.💜💜

Love the office reference! Beets are great. Toss them in a little red wine vinegar and chopped red onion.

Love beets, one of the benefits I like is the boost to nitric oxide it gives.

What's the brand of beets you buy? Tere's not a Big Lots near me anymore, but maybe I can find it at another store.

The brand of beets is OLD WORLD FOODS, and the sauerkraut brand is HENGSTENBERG

I love picked beets great in salads 🥗 like carrots with raisins and pickled beets.

I’ve eaten pickled beets my whole life, occasionally Harvard beets (I think that’s the name) and we raised them in my parents’ garden. But I don’t recall ever eating them raw (the root). Might try that if I remember to watch for and purchase. Definitely an aid to blood vessel dilation.

I have never eaten beets raw either. I prefer to bake them wrapped in tin foil.
