I made apple empanadas tonight— one for the BF and one for me. I winged the recipe as usual so don’t really know the macro count. I’m sure it was high, but they are so easy and quick— we like them once in a while. I generally make them out of refrigerator pie dough that I keep around and just whatever fruit I have that is getting a little old. There are lots of recipes on the internet. I have also made them with Brie and cranberries and as a meat pie. Very flexible. I just made two— automatic portion control.
