A few months ago I came across a simple, easy, delicious pancake recipe that I thought I would share. —-YOGURT PANCAKES. They are not “diet” pancakes or Keto pancakes — just pancakes. I don’t eat them often but this is now my go to recipe when I do.
The measurements make one very large pancake which is perfect for me.
1/4 cup flour 1 teaspoon baking powder Pinch of salt
1 egg 1/3 cup of plain yogurt (I use a whole milk yogurt)
Mix the dry, mix the wet, add dry to wet and let sit for 5 minutes. That’s it. No sugar in this recipe. You are going to Serve it with syrup most likely.
For those who avoid things like pancakes—, think about it. An egg and about 3 oz of yogurt— standard stuff for most of our meals. And flour just like you would find in your toast, or biscuit, breakfast crackers or rolls or cereal. All you are doing is repurposing the ingredients. And then there is portion control. One large sized pancake is plenty for me and I use Lakanto monk fruit syrup which has no absorbable calories and does not spike blood sugars for diabetics.— I really like it a lot. I also don’t pour syrup on my pancakes. I serve it in a side dish and dip the piece of pancake in it. Lots less consumption or waste.
