anyone have any interesting instapot recipes for me to try? I'm looking for something new and different 😁 nothing too fatty though (so not most beef really)!

I've really enjoyed cutting up a whole cabbage (minus stem of course) and cooking it in 1 cup of Chicken Broth and 1 stick of butter for 7 minutes, then Quick Release the steam! Sooo yummy! I've been making it every week! Also, my husband will ONLY eat "baked potatoes" when they're done in the InstantPot now. They're fluffier and more tender than you can get with any other cooking method. I use 1 cup of water, and cook them on the rack for 20 minutes, and then let them Natural Release and keep Warm for an hour or two before we are ready to eat them.

Oh, I'll have to try the baked potatoes!!! The 1 stick of butter might be too much for my digestive system, but I'll play around with it! Thanks 😊

OH, actually, the original source from which I got the "Buttered Cabbage" recipe only called for one-HALF a stick of butter! I forgot that I increased it (because I LOVE butter)!

TIME: Prep/Total Time: 20 min.
Ingredients:
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon pepper
1 tablespoon olive oil
2/3 cup chunky applesauce
2/3 cup spicy barbecue sauce
2 tablespoons Domino® or C&H® Pure Cane Dark Brown Sugar
1 teaspoon chili powder
Directions:
Sprinkle chicken with pepper. In a large skillet, brown chicken in oil on both sides. In a small bowl, combine the remaining ingredients; pour over chicken. I cooked for 10 minutes with natural release. If you start with frozen breasts, cook for 12 minutes with natural release
Yield: 4 servings.

We use the instapot a lot in our house. An easy one is chicken with a can of black beans, jar of salsa or Rotel and corn. I always add extra chili powder and cumin too. I also cook chicken (9 min typically) with whatever seasoning and shred it up for tacos, salads, pasta, chicken salad…I think you get it😀

I make pulled pork with a shoulder cut. Meat in, a shake of salt and pepper, a little barbeque rub and wait........ a can of rootbeer/ginger Zevia (stevia sweetened soda). and a handvul of whole garlic cloves. It's delicious and easy. If you want lowfat, you can chill is overnight and remove the cold fat layer. Then I serve it mixed in with sugar free BBQ sauce. We love it.
