Red thai curry shrimp, spinach and peanuts

Oh dear I'm a fling stuff at the pot person. So 1) curry spices of preference one can use a premix eg red curry paste (1 and half table spoon) but could also use masala of choice. It works better with Thai style spicing but if not available a) brands labelled as 'malay' and if all else fails b) curry powder of more spicey blend. Fry a little in 2 tbl spoons oil with about 1 tbl so ginger and one stick of lemon grass (also optional). Fry for flavour but don't burn. 2)throw in bag of frozen shrimp/sliced debonded de skinned chicken thighs (thighs work better than breast as will boil a bit and breast can end up a bit dry) stir a bit to take up flavour. About 300 -500g 3)add 1 can coconut cream. Scrape the tin but can also use a bit of fresh water or milk of preference to swirl off residue in can. No more than quarter can else it gets too watery.

Comment wouldn't let me scroll. 4) add veg. Good options are green beans, sliced zucchini, leeks, kale/spinach. If u want to add broccoli wait till mixer is boiling else broccoli gets a bit soggy. Depends how u like it. 5) add chicken/veg stock (one block/two tea spoons for dry/ three for wet) or serious pinch of salt. I'm all about tasting whilst cooking so add as u prefer or wait a little for meat to cook up and then add and taste to work out ratio. 6) can add fresh chilli later if not spicey enough. Cook about 15 Mon on solid boil and stir. It is unlikely to catch but depends how much meat/veg u added. 7) serve. Family eats it on brown rice. I skip the rice so mine is a bit more soupy. Add nuts on dishing peanuts or cashews are best but sometimes we add roast seeds instead. It has a lot of scope for play. Quite high calories because nuts and coconut cream but 100 percent keto if u check it spice)stock for possible added carbs.

Pot flinging is the best. Maybe I should rather call it... intuitive cooking 🤭 I treat recipes as inspiration and serving suggestions.

This looks totally the best💕. For this entire winter, I’m just going to devour Red Thai fling-pot creations... for breakfast lunch supper. Thanks for the inspiration
