was able to stand long enough in kitchen today to make something decent. chicken fajita stir fry over spanish rice, and deviled eggs - first time i ever made them - look like shit but super tasty (so easy)

@davidsprincess, thank you for asking. My mobility is about 85% back to normal. Got the dr's approval to go back to work tomorrow with restrictions, so hopefully getting out of the house will help mind body and spirit for a better tomorrow.

@jcmama, not yet. I also need to learn how to cook for a single person, so I've been eating left overs... Which that's fine, but after day four I'm ready for change. Tomorrow I have daytime shift off, so I'm going to see what I can concoct in the kitchen for night shifts this weekend.... Any suggestions? I was thinking homemade pot pie, but I haven't calculated calories on it yet.

To cook for a single person, you have to buy for a single person. Buy and cook only 2 days worth of leftovers.

@aboutmytribe - I do shop for just myself.... My problem is I don't really know how to cook well, so portion sizes for just one or two days eating is something I need to work on.
