I’ve been eating more calories this week, as I was feeling a bit weak (I think I caught a bug, but because I’ve not been eating dairy, I didn’t get all sinusy). Still focused on fibre, protein and water, and now also making sure to get calcium-rich foods like tofu and tahini etc in. I’m excited for my Babylonstoren delivery this morning - I’ve been pinteresting some amazing recipes to try out this week :)

I get oats in at breakfast, and try to have some sourdough rye on hand (I make my own) and a big batch of roasted veg. On the weekends I’ll make batches of beans like butter beans, chickpeas, sugar beans, lentils, etc so that when I want to, I can just throw in a bunch of items together - grain, legume or protein and a heap of veg, then I add a flavour, like pesto (basil, or sage, or coriander, or tomato, etc), or hummus (sometimes with beetroot, or onion, avo or parsley), or dressing (like ginger miso, balsamic, mustard and maple syrup, or lemon shallot), etc. I also have a lot of kale in my fridge today, so I’m going to make kale chips in the oven.
Today there will be a leafy greens, cucumber, mango, avo, tofu, mint and some soba noodles, with tahini ginger dressing :) I’ll post pics later.
