I made 20 litres so I don't cheat during the week when I get home from work late! This is 100% freezer friendly, so I stockpile different batch cooked meals to eat during the week. My fiance thinks I'm a doomsday prepper, hahaha, but it really helps with controlling what I eat!
A 400ml serving should not be more than 300 calories, I think? I didn't use any oil in cooking this dish.
Recipe:
Ingredients (for 20 litres, note - you will have to reduce ingredient sizes for smaller batches!):
4 onions
4 stalks celery
1 small bag of carrots
1 head of broccoli
1 head of cauliflower
Loads of Fresh thyme (you can use dried if you like!)
5 cloves garlic
1 tsp salt
2 tsp pepper
4 chicken stock cubes
4 potatoes
8 chicken fillets chopped (no skin)
Directions:
1. Boil chopped chicken breasts in water with thyme, garlic and stock for 30 mins until cooked tender
2. Add carrots and onion
3. Slowly add the other ingredients after 15 mins
4. Let it simmer for a while - the chicken pieces will start falling apart as they get more tender, which will help with flavouring the dish.
Then it's ready to go! It's really filling and warming.
