I make a killer ramen/pho soup, but like most Asian dishes the salt content is staggering as are the carbs but once in a while I just suck it up and do it. Last night I made some and it was gooood. Years ago I found a slotted “soup” spoon— someplace, I can’t even remember where or what it’s original use actually was but I use the slotted spoon so that the majority of the high salt broth drains away. After I’m done, I discard the broth and then drink plenty of water to dilute out the salt. Life is a compromise. A tweak here and there that I think allows me to eat just a tad healthier while still occasionally enjoying some of my favorite things.

I love ramen too but can't handle the salt.

A slotted spoon of some sort at least mitigates the amount of salty broth you take in. My soup has bok choy, tofu, radish, jalapeño , Thai basil , just a few bean sprouts and of course that tasty but carb heavy rice noodles. Now I’m good for another few months.
