Have you checked to see if there are any local butchers that might give you a better price per pound ?

Blew me away too. Although we had tongue sandwiches when I was a kid and they were good, but I haven’t seen one this big or this expensive before

Fordtidor37. —tongue would not be on my menu today. I just saw it in the meat case at this huge ethnic market that I go to.

You’re perhaps underestimating the inelastic demand (especially for export) of this tender cut (it’s not a weight-bearing muscle) which is rich in potassium (even compared to other cuts of beef) and other very bio-available vitamins and minerals. Also, consider the inelastic supply: a typical cow yields over 600 pounds of meat after butchering, but only one tongue that weighs just a few pounds.

No, I get it— one heart, one liver— etc. just not a preferred food choice today.

Yikes. I don't like a lot of beef really and tongue would not be my choice. Way too expensive for me.

I haven't had tongue since I was a kid, everything is expensive these days. I'm going to have to pass at that price.
