Gastropodas this recipe is unusual in that it calls for a homemade Calvados apple sauce to be lightly spread on the bed of the unbaked crust, there is small amount of the Calvados in the apples themselves and then again a small amount in the whipped cream.
The shine to the crust comes from a homemade apple cider jelly that I specifically make and freeze just for brushing on the crust of the pie. This is a real recipe. I’m not sure why it calls for the very thick applesauce to be spread on the floor of the crust, but it is so good I just do it and don’t rock the boat. The first time I made it I had a hard time finding apple jelly so I started making my own to keep on hand in small four ounce jars.

One would think from looking at my liquor cabinet that I was a heavy drinker. I don’t drink at all, everything I have is for cooking. It’s fun.
