Calvados and apple gallette with a sprinkling of homemade granola and Calvados whipped cream. It’s all about portion control. Six for dinner tonight. Chicken Marbella for the entree.

Gastropodas this recipe is unusual in that it calls for a homemade Calvados apple sauce to be lightly spread on the bed of the unbaked crust, there is small amount of the Calvados in the apples themselves and then again a small amount in the whipped cream. The shine to the crust comes from a homemade apple cider jelly that I specifically make and freeze just for brushing on the crust of the pie. This is a real recipe. I’m not sure why it calls for the very thick applesauce to be spread on the floor of the crust, but it is so good I just do it and don’t rock the boat. The first time I made it I had a hard time finding apple jelly so I started making my own to keep on hand in small four ounce jars.

One would think from looking at my liquor cabinet that I was a heavy drinker. I don’t drink at all, everything I have is for cooking. It’s fun.
