1. Honey is heavy, so baking soda helps your dough rise.
2. Baked goods with honey may overbrown, so it helps to bake them a little lower and slower.
3. Honey is sweeter than sugar, so you’ll only need about 3/4 as much when you replace sugar in a recipe.
