761 Cals / completes a 1 HR Gym session

Had a little over 2,100 Cals today. Most was clean eating except for 38g Lindt, 1T Mayo, small packet of crisps.

Protein & Fat was a little over 100g. Carbs a little over 180g, fiber 36g, added sugar 25g.

Oh my word that looks delicious! how did you cook your eggplant please? One of my favorites.

With the eggplant, you have to be generous with the oil so the choice of oil is important to keep it healthy. I suggest either coconut, avocado or peanut oil Because they withstand very high temperatures and so don’t turn to trans fat like olive oil would when used to cook with. Slice the eggplant 🍆 with a thin-med thickness salt and pepper it with a little oil then add a dry herb such as oregano and thyme. 1 clove of fresh garlic finely chopped and 2 Birdseye chili finely chopped. Get some oil in a nonstick pan with a fresh rosemary sprig &/or Thyme. (** If you have a lid to your pan I would think the steam might help the process in the beginning if you don’t want to use a lot of oil. However half way through take lid off and cook with a drizzle of oil to get the caramelizing happening. **) Bring heat to medium and add the eggplant in one layer only (not on top of each other). Add the garlic & chili only when the eggplant begins to slightly soften. Add fresh lemon juice from 1/2 a lemon 🍋 and continue to flip and cook until it’s caramelized and cooked through.
