Today's meal: Spicy vegetable curry served with buckwheat flatbread/rotis, and a side plate of more veggies with a balsamic tahini dip. Dessert was a bowl of vegan chocolate custard (homemade) topped with nuts, seeds, and stewed fruit.
So stuffed right now, oh my goodness!! Was well worth it, though. In terms of my workout, I did a 5km run, which... yay me!! I can't say I'm loving running as yet, but I don't hate it, lol! Let's see where this road leads, I guess.
Procrastinated the whole day today, but I managed to meal prep some banana oat pancakes for our hike on Saturday. Trying to be prepared with healthier snack alternatives so I don't mess up my refeed plan.
