It's vegetable cooking day!
Oven-roasted asparagus, yellow and green zucchini, plum tomatoes and golden beets in foil. French green beans were boiled off to be dressed with a vinaigrette later. Keeping my calories down, my fiber up!

ChunkyMonkeyHere It's the ONLY way to eat winter tomatoes! Roast PLUM tomatoes slowly on parchment paper in a cookie sheet (with sides) at 300 degrees. Roasting concentrates their flavor and sweetness. Delicious in salads, on chicken, steak or a hamburger, in an omelette. You can also blend them with oil and vinegar and your choice ofspeice to make a perfect Roast Tomato Vinaigrette.
