This roasted red pepper sauce is one of my favourite pasta sauces, and it’s so quick to make - except for having to soak the cashews for two hours beforehand.

I roughly chop about three red peppers,season, and air fry them for about 20-30 minutes. You can also roast them in the oven, of course.
Soak half a cup of cashews for about two hours or more.
Put the peppers and cashews in a blender, add some garlic, maybe a chilli, if you want some spice, about two tablespoons of lemon juice, about a quarter cup of nutritional yeast (or Parmesan, if you don’t want plant-based), and just a bit of water. Whizz it up. You can add a bit more water to thin it, if needed, and seasoning to taste.
Top with some tender stem broccoli and flaked almonds. Just put it all in a pan, maybe with some more garlic, add some lemon juice, and a bit of water, if needed, and cook until soft but still firm.
