My friends and I had so many delicious oranges left that we just could not eat so it was a day of making orange marmalade— about 30 half pint jars. Turned out great. Now tomorrow we have to give it all away. So easy and so fun to do.

Oh how I love orange marmalade! Unfortunately, I'm not eating sugar or bread these days, so this will have to be a someday-treat for my someday-maintenance! I used to can a lot. I've made tomato marmalade and pineapple marmalade.

I always log my jams and jellies as a tablespoon but in actuality I probably use. Just half a tablespoon. I would rather have jam on my toast than nibble on candy or some other type of higher carb treat. For me, it’s about having learned portion control and moderation and what food items really add joy to my life and I look forward to. Mine is my breakfast coffee concoction and jam on my toast. Deprivation and severe food restriction doesn’t work

I have seen other people mention tomato marmalade, but I have never tasted it. I will look that up. Pineapple marm sounds great. Sounds like a good ice cream topping.

I had some extended visits to Hawaii in my younger days. Once the pineapple plantation workers went on strike and the plantation encouraged the local folks to go out and take as many pineapples as they could, so that they wouldn't rot in the fields. We filled the huge trunk of a car with them, then did what we could to process the food!
Also had a similar experience there with mangos.
