I made deep fried chicken livers for my dinner tonight. . I hadn’t had them for years and years.they were so good but I stopped at 120 gm.. marinated in Tapatio and mustard, dredged in flour and lots of spices. They were so very good. I looked them up in the national database for foods. Here is what it said

Protein— 24.5 grams.
Carbs—-0.9
Fat total—- 6.5

Vitamin A —- a whopping 13, 328 units which is 287% of your daily requirement.
Iron is 11.6 mg 65% of your daily requirement
Cholesterol 563 g. Which is %188% of your daily requirement..

Also a host of other very important micro nutrients
Plus it was really great testing.

Organ meat is one of those foods that the American diet should contain more of once in a while. Powerhouse of nutrition.

love chicken livers need a meal of those here soon ever have rabbit or hog liver it's amazing also

I really like calves liver also but I make it fried with brown gravy and onions. It is also one of those once every couple years meal.

Mm2 — I love wild boar. My very favorite meat product. I no longer have access to it since my hunter friend moved. Same with commercially available rabbit— not in Southern California.

Our two local butcher shops can get lots of things off the main menu here. I think they list it as hare so as not to upset the kiddos or their parents. I'll look next time.

Vitamin A from animals can be very problematic if you eat too much.

Oh, no worries there. I’m too cheap to go often. Just for special things and special people. None of which are allowed this year. 🤣
