I recently became more acquainted with a gal at my pool. She is a hard core swimmer— about 42 years old. While I swim a slow pace for 2 hours, she is balls to the wall for 2 hours. She is Mexican by ethnicity but a paleo person by diet. Cracks me up. Paleo is similar but different from Keto. She uses fresh everything. Grass fed lean beef, No processed foods, no sugar, no flour or grains but lots of nuts and seeds, and lots of lower carb/lower glycemic fruits and vegetables.Eats about 75-100 carbs a day. She started doing this lifestyle about 10 years ago. After a lifetime of eating a typical Hispanic and American diet she had developed a lot of health issues and had watched her entire family fall one by one into type 2 diabetes, kidney issues, strokes, hypertension etc. she had six siblings. Now she has 3. She lost the others at young ages from diabetic complications. She made a decision to try a Paleo WOE. She took all kinds of classes to learn as much as she could and took actual cooking classes. She is now A paleo/Vegan chef and is finally doing catering and is a private chef. She will soon be opening a bakery that follows her way of eating. She just recently received an invitation from our local children hospital to cater their annual picnic for their pediatric cancer patients. Those kids are on a strict low or no sugar diet. They heard about her and contacted her. Pretty awesome I think.

By the way, all her own health issues declined with the change in diet. And, importantly, she is not diabetic.

So the gist of my story is that today she brought me 4 cookies that she had developed recipes for for me to try.—— oMG. Awesome to the max. they were all four excellent— I don’t care what your way of eating is. But, my personal fav. Was the chocolate chip made with almond flour, olive oil or coconut oil, pecans. Finely diced dates and 85% cacoa. Tender texture like a shortbread if you use olive oil and a crisper texture on the edges and a little denser if you use coconut oil. She buys the cacoa from a vender in LA who gets the chocolate from Ecuador. This was one fabulous cookie 2 carbs and 1 sugar per cookie. For sweeteners she uses monk fruit or a very high quality maple syrup in her baking.— she buys almost nothing from traditional grocery stores but has direct lines to pure venders. She uses no artificial sweeteners.

Obviously her final product will have a higher price when she gets her bakery open, but I think it will be worth it.

it seems that the beauty of the way she eats and lives (husband, kids included) is that no Ketosis is required and the eating is fairly eater friendly. I eat foods and use recipes from all types of ways of eating. If it looks good and tastes good it works for me. She is a firm believer in portion control and moderation in their eating habits as a matter of principle and has raised her kids that way. Her husband has fully come to appreciate her concept of quality over quantity. The other benefit to the way she eats is that she can have family over for meals and it is never an issue. People love the food she makes. She has worked very hard to create a version of so many of her family favorite foods.

So for some of you who may be struggling with some of the aspects of the Keto Diet, check out paleo and see if might be a little more flexible for you. I just want the recipe for those cookies. Yum yum.

That is fantastic. I realized last night I may never be in Ketosis because I do have days where I struggle to keep my vegetable consumption under 20 net carbs. I take solace in the realization I'm still eating low carb and I believe what is considered complex carb vs simple and I'm still at a deficit. I debated whether exceeding that 20 was a rebellious eating binge or just simply not the best for my body. Still many lesson's to learn. Your friend is inspiring.

That is pretty close to what I thought it would be. They do know that prehistoric man did have cancer and they have found heart disease in some of the ice mummies and bog bodies that have been recovered. I’m sure they don’t have any kind of a statistic because too few intact remains to make that one kinds of assessments.

The Mediterranean diet is To me the most reasonable, most livable WOE that I have considered. That coupled with portion control and moderation. My only self restriction is salt. I’m careful to limit high salt foods like ham and sauces with heavy salt. Salt makes me miserable. I aim for 1500-1800mg. Often my food log shows a lot more but that is because I just pick a like item from the database and use it rather than going through the tedious process of creating recipes with a dozen ingredients. I always know where I am and where I need to be
