Starting the challenge with a vegetable at every meal. Who knew breakfast could be so hard?

Thanks for the suggestions. I've truly gotten out of the habit of cooking anything in the morning. Shouldn't be so difficult mixing some veggies with eggs in the microwave for quick omelettes. The girls in the office and I used to have smoothies, but they stopped making them, and I hate all the mess if it's just for me. Will have to convince them to start again.
