Have you ever heard of Michael Pollan? He talks about how you can eat mostly plants, even if you could never give up meat. That meal reminds me of one of the things he says—if you still eat meat, make it the garnish! Michael Pollan is very honest about still eating meat, since most nutrition/sustainability experts were vegetarian back in the 2000’s and 2010s when his research was popular, and are usually vegan now.
