are the apples and Brussels sprouts just sheet pan roasted? because that looks really yummy and fits my rainy day mood.

Kat, I cooked the apples & brussels sprouts in the covered casserole dish with the pork chop I was reheating. You could definitely cook them on a sheet pan though.
