This week is the first week for me that cooking vegan seems easy and "normal". I am not elimating all animal products thought i want to. I find that having egg works really well for me as a source of protein so i dont think I'll ever be 💯 vegan. Still. I have come such a long way since going plant based and i am really happy with my food and i am never hungry. Still not really going. Down but i look so much better every day. Today i used coconut oil and vegan basil pesto instead if white sauce with roasted veggies and pasta. Yum!!!!
