Oven roasted Dijon, Garlic, Tarragon Salmon, Maple Balsamic Brussels Sprouts & sliced tomatoes

Sadie....easy....Wash & cut 2 cups brussels sprouts in half or quarters (uniform size). Toss in 1 tblsp olive oil & salt & pepper. Roast in 400° oven (I used my iron skillet) for 20 to 30 minutes, til tender. Toss in 2 tblsp balsamic vinegar & 1 tblsp maple syrup. I tossed mine cooked the last 5 minutes.
