Sweet potato sliced about 5mm thick, in a frying pan with coconut oil. Really thin layer of coconut oil. Then take them out and leave on a kitchen tissue in a plate for some oil to drain.

you can chase me with mushrooms but those sweet potatoes look delish! Think I must go plant some tomorrow

Loooks tasty... Those mushrooms and onions would go well with hake. <nice spin on fish and chips. Made more flavorful>
