Chocolate polvorones w/raw sugar on top. Reduced to 62 cals a pop. And, cranberry oatmeal cookies with ground flax & chia seed. Reduced from 130 cals/cookie to 111. No vegetable oil added just apple sauce & KA’s sugar alternative 😁

I’ve done a few iterations of these to try and look at alternative ingredients that are lower in calories. Both are very yummy and I have to say this my best batch, yet!

I’m not going to lie my dear, they are! The oatmeal ones are definitely rib stickers. That chia and flax seed will definitely make 1 cookie enough but it’s a wonderful blast of flavor. And, the polvorones are a bit dangerous. They aren’t as dense but it’s easy to pop more than one in your mouth- but even 2 won’t break the bank calorie wise.

No worries Windy - I completely understand. I use them in my nightly dessert to help get more calories in without going overboard. But I’m also burning 🔥 a ton when I cycle. I don’t think I would have kept these on hand during my weight loss journey for the same reason ❤️ And, thank you 🙏 unity- it was definitely a zen day in the kitchen 🥰

Zoo, you might just add to that "all you got left!" LOL Mom's telling me I need to make a double batch of the polvorones. But, I think for both our sakes, 16 at a time might be the safer bet :-)

That's fine I adore cranberry so I'll take the rest of the cranberry cookies off your hands since zoo's is stealing all the chocolate ones anyway, LOL 😆🤷.

Okay wifey - let's get you the recipes. Here is the link to the recipe for the craberry flax seed oatmeal cookies. It's off the King Arthur website and you can definitely tweak this recipe. Just copy the link in your browser: (https://www.kingarthurbaking.com/recipes/oatmeal-and-flax-cranberry-cookies-recipe). I use their sugar alternative in place of the brown sugar and I use applesauce in place of their vegetable oil. They also have a ton of baked good recipes you might be interested in. Here is the one for the polvorones: Ingredients: • 1 cup all-purpose flour • 1/2 cup unsweetened cocoa powder • 1/2 cup powdered sugar (I use the baking sugar alternative) • 1/2 cup butter, softened (I use 3/4 applesauce) • 1/2 cup blended almonds (almond flour works fine) • 1/2 teaspoon vanilla extract 1 full teaspoon of baking powderDirections: Oh, and I use 1/2 teaspoon of raw sugar to sprinkle on top instead of powdered sugar.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the flour, cocoa powder, Almond , and powdered sugar. Add the applesauce and vanilla extract to the dry ingredients, then mix until a dough forms. Pat the dough into a circle about 1 inch thick. Use a round cutter to cut out place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the back of a spoon. Bake in the preheated oven for 12-15 minutes, or until set. Allow the Chocolate Polvorones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, dust with additional powdered sugar if desired.
