This looks delicious. Do you make your ricotta with lemon juice or something else? I’m sticking with yogurt, but ricotta might be a nice change.

Thanks Kat! Homemade Ricotta is a staple in our household. We make it weekly so I have this treat every morning! It’s good with jam too. When I’ve make it we use a full teaspoon of citric acid to get it to curdle. It can be found in the baking section of any grocery store. We use the powder form because we make it so frequently. We also make our own Greek yogurt as well, which of course I put on just about anything. 😂

Hmmm, I bought some rustic bread for NYE, maybe I’ll make some ricotta to go with it. Great idea. I have citric acid on hand to combat scale in my dishwasher because of our water. Happy new year to you and mom.

Oh, I think you will thoroughly enjoy! We use a half gallon of 1% and a half gallon of 2% milk combined. It makes quite a bit and lasts us about a week and a half. Heck for nye you can throw some savory herbs in there and make it into an herb spread. If you’re using low-fat milk it’s very calorically friendly!

If it wasn't for my issues with fructose and lactose, I would probably enjoy it. But I'll be in pain afterward, so it's not worth it to me.
