Whiting filet, Roasted Veggies, Asparagus and Sweet Potato - we eat way too many sweet potatos.

your plate looks like a well-decorated room, with three main pieces of furniture (potato, asparagus and fish) then a patterned accent pillow (the veggies) to pull it all together. Or maybe i watch too much HGTV :)

3dkids2, I'm a lazy, No - Hubby says efficient cook. I try and keep most things simple. I cook sweet potatoes in the Instant Pot with a cup of water. I usually do 5 pretty large ones at a time. 30 minutes and slow release. The skin pretty much falls off them. I just add the potato's to a casserole dish and smush. Scoop a serving and heat. I've realized the larger ones are sweeter than the small ones.

I love sweet potatoes. I just bake them in their skin about one hour at 400°

I don't know that you can eat too many sweet potatoes, unless you fill your entire plate with them and nothing else 😉 Your plates always look like a reasonable portion. One of the best sources of potassium there is, and oh my goodness, like candy! I never understood the Thanksgiving sweet potato casseroles where they're sweetened and then topped with marshmallows when they're so good plain with a dusting of cinnamon 😋

I buy yams because they are orang. The sweet potatoes in my grocery store are white. Yams seem to have more calories.

I’m vegan so there will always be potatoes 😋. No reason to cook them the same way every time, if you’re getting bored. They’re great in curries (Thai or Indian) and you can swap them for butternut squash, like in soups. You could also ask the family to submit recipes if they want something different.

Thanks for the ideas! Imma - I don't have an instapot (yet) soooo..... baking it will be. Next try will be fries in the air fryer....... I'm so on this! ❤️

Fritzy 22,. These are yams too. I've always called them sweet potatoes because my family did. The calories aren't too bad if you don't add anything. I used to drown them in Smart Balance or Butter. Now I eat them plain. I have changed so much in the past few months.

Fun facts: If it's orange it's a sweet potato, if it's white it's a yam. However, either one has 2-3X more potassium than bananas!

Phoenix is that a serious statement? I buy garnet yams. They are orange. The only sweet potatoes in my grocery store look white. I've never bought them so don't know what color they are when sliced. there isn't a bigger variety than those 2_choices where I live
