My first attempt at Ukrainian Honey Cake from Mama's recipe. It turned out pretty well! Not low calorie at all but delicious in moderation. I already shared some with the neighbors.

Thanks, Dmytro! I guess my Mama is a bit of an over achiever. She sent my husband 4 recipes for translating but said I should try this one first since it's best. Are there any other classics I should ask her about? I haven't been brave enough to try Kiev cake yet but maybe soon.

Bdixon1989's, which exactly classics can be interesting for you? Different cakes or other Ukrainians dishes, like borscht? I've never eaten homemade Kyiv cake! I thought it's impossible to cook at home. Maybe I am wrong.

Kiev cake can be made at home but I think even most Ukrainians buy it. It's layers of meringue, cake, and cream and the combination of them does make for a technically difficult bake. My husband has the Ukrainian cooking down. He makes borscht, pierogi, syrnyky and a whole other bunch of things. He tried to make one of his Mom's cookie recipes and almost broke our teeth so I tend to handle the baking. I like the holiday bakes and things people make to show off a bit. I made my mom's recipe for Hilltop Cake (I forget the name in Ukrainian but that's a direct translation) and that was fun. Surfing the internet I found some Ukrainian cheesecake recipes but it seems there's so many kinds I didn't even know where to start.

Bdixon1989, I've never heard about Hilltop cake. maybe you meant Anthill cake. It's really popular here. In Ukrainian it sounds like "murashnik".

Dymtro, I guess it is also called Monastyrska izba or Monks hut cake. The ones I found online look like they had cocoa powder sprinkled on top but Mama makes hers with crushed nuts on top. Its made with rolls of pastry filled with cherries and stacked into a triangle shape. The rolls are held together by custard or whipped cream. You might have solved the mystery of the poppy seed cake my husband described once and wanted, though. I asked him what Murashnik was and he just said, "Oh! I want some!"

Bdixon1989, yes, I know this cake. We call it cake "girka". But "izba" is a russian word, not Ukrainian

Okay that's what they call it too! I just couldn't find anything when searching hirka/girka online and we figured Mom might have gotten the recipe some time ago and it either had another name or she renamed it. Hubs said the name I found sounded Russian but didn't say why.
