Looks very colourful and crunchy. Had a look at the Nigella recipe. Gather you can pickle the onion slices and make them more pink by soaking them in red wine vinegar.

Judy you can get away with one tablespoon of oil and definitely half the salt, and lods more spinach. I did use the quick approach for the onions this time but I very often make a big batch that keeps, using this recipe (they go so well on things!): https://www.bbcgoodfood.com/recipes/quick-pickled-onions
